Grandma's Apple Cake, submitted by Gail Tesson Serves 12

"An amazing spice cake with apples and raisins. This is topped off with a refreshing whipped cream frosting."

Ingredients:
  • 3 cups all-purpose flour
  • 2 cups white sugar
  • 1 cup mayonnaise
  • 1/3 cup milk
  • 2 eggs
  • 1 teaspoons baking soda
  • 1 teaspoon baking powder
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cloves
  • 3 cups apples, chopped
  • 1 cup raisins
  • 1 cup chopped walnuts or pecans
  • 2 cups heavy cream
  • 1/2 cup confectioners' sugar

Preparation:

Preheat oven to 350° F. Grease and flour two 9 inch pans or one 13 x 9 inch pan.
In large bowl with mixer at low speed, beat together flour, sugar, mayonnaise, milk, eggs, baking soda, cinnamon, nutmeg, salt, and cloves, scraping bowl frequently, for 2 minutes. Batter will be thick. Sir in the chopped apples, raisins and nuts.
Spread batter into prepared pan. Bake in the preheated oven for 45 - 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan on wire rack for 10 minutes. Remove and cool on wire rack.
In a large bowl, whip the cream and confectioners' sugar until stiff peaks form. Frost the cake or serve on the side.
